Here at castlebar.ie we came across Jack & Eddie's Finest Port Sausages  in our local SuperValu and we just knew from the first bite that they came from pigs reared with tender loving care. We discovered that they come directly from a farm in Liscarney, Wesport. The sausages are simply scrumptious!! Like nothing you've ever tasted before. They formed the basis for our almost traditional Bangers & Mash meal as outlined below.

Chop and saute a leek(s) in a little oil and butter, season, cover with greaseproof paper and a lid and saute gently for about 5-10 minutes. Meanwhile wash the kale, discard tough outer leaves, chop finely, removing hard central veins, and add to the leeks, continue to saute gently for another 5-10 minutes. Add this to your mashed potatoes with a little more butter and milk (or cream !!) if necessary. Season. Pile on warm plates with these lovely sausages grilled or fried as you prefer. Top with carmelised onions and enjoy.

It's nice to see local produce with such good quality and taste.
