Colcannon - a dish for Good Friday, Hallowe'en and other times !!
1 lb each of kale or cabbage, and potatoes, cooked separately
2 small leeks or green onion tops
1 cup milk or cream
4 oz (1/2 cup) butter
salt. pepper and a pinch of mace
Chop leeks or onion tops, green as well as white, and simmer in the milk or cream until soft. Drain, mash and season potatoes, add the cooked leeks/onions and milk/cream, blend in the kale or cabbage and pile into a warm dish. Make a well in the centre and fill with melted butter. The vegetables are served with spoonfuls of melted butter.
